Red Currant Muffins Recipe

Instructions

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • Line 12 muffin cups with paper liners.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Whisk together the vegetable oil, milk, and egg in a separate bowl.
  • Stir together the wet and dry ingredients until just combined.
  • Incorporate the red currants.
  • Divide the batter evenly between the muffin cups.
  • Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and set aside for 5 minutes to cool in the pan.
  • Place the muffins on a cooling rack to cool completely.
