Instructions

  • Preheat the oven to 400°F.

  • Grease or line muffin cups with muffin liners.
  • Combine the flour, sugar, salt, and baking powder in a large mixing bowl.
  • Combine the vegetable oil, egg, milk, vanilla extract, and cinnamon in a separate bowl.
  • Stir together the wet and dry ingredients until just combined.
  • Blueberries should be folded in.
  • Fill muffin cups two-thirds full with batter.
  • Bake the muffins for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
