Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Prepare a muffin pan with paper liners.
  • Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
  • Whisk together the vegetable oil, egg, milk, and vanilla extract in a separate mixing bowl.
  • Stir the wet ingredients into the dry ingredients until they are just combined.
  • In a small mixing bowl, combine the brown sugar, flour, and butter with a fork until crumbly.
  • Divide the muffin batter evenly between the muffin cups.
  • Evenly distribute the streusel topping over the muffin batter.
  • Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool for 5 minutes in the muffin tin before transferring to a wire rack to cool completely.
