Oat Flour Muffins Recipe

These muffins are gluten-free and nutritious because they are made with oat flour and almond flour. They're flavored with vanilla extract and sweetened with coconut sugar. They are an excellent breakfast or snack.

Instructions

  • Preheat the oven to 375°F and spray or line a muffin tin with cooking spray.
  • Whisk together the oat flour, almond flour, coconut sugar, baking powder, baking soda, and salt in a large mixing bowl.
  • In a separate bowl, combine the almond milk, melted coconut oil, eggs, and vanilla extract.
  • Stir the wet ingredients into the dry ingredients until thoroughly combined.
  • Fill each muffin cup about 3/4 of the way full with the batter.
  • Bake the muffins for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
