Instructions
- Preheat the oven to 375°F (190°C).
- Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice in a separate mixing bowl.
- Mix the wet and dry ingredients together until just combined.
- Blueberries should be folded in.
- Fill a muffin tin 2/3 full with batter and line with paper liners.
- Bake for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean.
- Allow muffins to cool for 5 minutes in the muffin tin before transferring to a wire rack to cool completely.
