Lemon Blueberry Muffins Recipe

Fresh blueberries and zesty lemon flavor abound in these Lemon Blueberry Muffins. They're ideal for breakfast, brunch, or a midday snack.

  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 375°F (190°C).
  • Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  • Whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice in a separate mixing bowl.
  • Mix the wet and dry ingredients together until just combined.
  • Blueberries should be folded in.
  • Fill a muffin tin 2/3 full with batter and line with paper liners.
  • Bake for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean.
  • Allow muffins to cool for 5 minutes in the muffin tin before transferring to a wire rack to cool completely.
