Instructions

  • Preheat the oven to 375°F (190°C).
  • Combine the flour, sugar, baking powder, baking soda, and salt in a medium mixing bowl.
  • Stir the blueberries and gooseberries into the dry mixture gently to coat them in flour.
  • This will keep the fruit from sinking to the bottom of the muffins while they bake.
  • In a separate bowl, combine the milk, vegetable oil, and egg.
  • Stir the wet mixture into the dry mixture until just combined.
  • Line a muffin pan with paper liners or spray with cooking spray.
