Currant Muffins Recipe

These tasty muffins are packed with tangy currants and are ideal for breakfast or as a snack.

Ingredients

  • Total Time: 35 minutes

Instructions

  • Preheat the oven to 400°F (200°C).
  • Line a muffin pan with paper liners or spray with nonstick cooking spray.
  • Combine the flour, sugar, baking powder, and salt in a medium mixing bowl.
  • In a small mixing bowl, combine the milk, vegetable oil, and egg.
  • Stir together the wet and dry ingredients until just combined.
  • Stir in the currants.
  • Divide the batter evenly between the muffin cups.
  • Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
