Instructions
- Preheat the oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease it.
- Cream together the butter and sugar in a large mixing bowl until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Separately, whisk together the flour, baking powder, and salt.
- In three parts, add the dry ingredients to the wet mixture, alternating with milk and mixing well after each addition.
- Mix in the poppy seeds.
- Fill prepared muffin cups about 3/4 of the way full with batter.
- Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
