Vegan Blueberry Muffins Recipe

These vegan blueberry muffins are light, fluffy, and packed with fresh blueberries. They're ideal for breakfast, brunch, or as a sweet treat.

Ingredients

Time Needed

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 375°F (190°C).
  • Whisk together the flour, sugar, baking powder, and salt in a mixing bowl.
  • Combine the vegetable oil, almond milk, and vanilla extract in a separate bowl.
  • Mix the wet and dry ingredients together until just combined.
  • Blueberries should be folded in.
  • Fill each muffin cup 3/4 full with batter and line with paper liners.
  • 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from oven and set aside for 5 minutes to cool in the pan.
  • Cool the muffins completely on a wire rack.
