  • Separately, whisk together the milk, vegetable oil, eggs, and vanilla extract.
  • Mix wet and dry ingredients together until just combined.
  • Mix in the raisins.
  • Fill a muffin tin halfway with batter.
  • Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
