Instructions

- Whisk together the buttermilk, egg, vegetable oil, and vanilla extract in a separate mixing bowl.
- Stir together the wet and dry ingredients until just combined.
- Incorporate the chopped walnuts.
- Divide the batter evenly among 12 muffin cups lined with paper liners.
- In a small mixing bowl, combine 1/4 cup rolled oats, 1/4 cup all-purpose flour, 1/4 cup brown sugar, and 1/4 teaspoon cinnamon for the streusel topping.
- 3 tablespoons cold butter, cut in until the mixture is crumbly.
