Mini Blueberry Muffins Recipe

These mini blueberry muffins are ideal for breakfast or as a snack. They're simple to make and packed with fresh blueberries.

Ingredients

Time Needed

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • Preheat the oven to 375°F.
  • Whisk together the flour, sugar, baking powder, and salt in a medium mixing bowl.
  • Separately, whisk together the milk, oil, egg, and vanilla extract.
  • Mix the wet and dry ingredients together until just combined.
  • Blueberries should be folded in.
  • Grease or line a mini muffin tin with paper liners.
  • Fill each muffin cup about 2/3 full with batter.
  • Preheat the oven to 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
